  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 garlic cloves, minced
  • 2 cans (14.5 oz each) diced tomatoes
  • 1 cup chicken or vegetable broth
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1 teaspoon sugar (optional, to balance acidity)
  • 1/2 cup heavy cream
  • Salt and pepper to taste
  • Fresh basil for garnish (optional)

Instructions

  • Cook the Aromatics: In a large pot, heat olive oil over medium heat. Add the chopped onion and sauté for 5-6 minutes, or until softened. Add the minced garlic and cook for an additional minute until fragrant.
  • Add Tomatoes and Seasonings: Add the diced tomatoes, broth, dried basil, oregano, and sugar (if using) to the pot. Stir to combine and bring the mixture to a simmer. Let it cook for about 10-15 minutes, allowing the flavors to meld together.
  • Blend the Soup: Remove the soup from heat. Use an immersion blender directly in the pot to blend the soup until smooth. If you don’t have an immersion blender, carefully transfer the soup in batches to a blender and blend until smooth, then return it to the pot.
  • Add Cream: Stir in the heavy cream and cook over low heat for another 3-5 minutes to warm through. Season with salt and pepper to taste.
  • Serve: Ladle the soup into bowls and garnish with fresh basil if desired. Serve hot with crusty bread or a grilled cheese sandwich for a complete meal!

Notes

  • For a dairy-free version, use coconut milk or a plant-based cream instead of heavy cream.
  • Feel free to add a pinch of red pepper flakes for a bit of heat.
  • You can use fresh tomatoes instead of canned if preferred, but it may require extra time to cook down the tomatoes to a sauce-like consistency.
