Ingredients
Scale
- 1 lb fresh spinach (or 1 10-oz package frozen spinach, thawed and drained)
- 2 tablespoons unsalted butter
- 2 cloves garlic, minced
- 1/2 cup heavy cream
- 1/4 cup cream cheese, softened
- 1/4 cup grated Parmesan cheese
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- Pinch of ground nutmeg (optional)
Instructions
- Prepare the Spinach:
- Wash and dry the spinach. If using frozen spinach, thaw completely and squeeze out excess water.
- Sauté the Garlic:
- In a large skillet, melt butter over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant.
- Cook the Spinach:
- Add the spinach to the skillet in batches, stirring until wilted. Remove from the pan and set aside.
- Make the Sauce:
- In the same skillet, add heavy cream and cream cheese. Stir over low heat until smooth and creamy.
- Mix in Parmesan cheese, salt, pepper, and nutmeg (if using).
- Combine and Serve:
- Return the spinach to the skillet and stir until well coated. Let it simmer for 2-3 minutes. Serve warm.
Notes
- For a lighter option, substitute half-and-half for heavy cream.
- If the sauce becomes too thick, add a splash of milk to loosen it.
- This recipe works beautifully with fresh or frozen spinach, making it versatile and convenient.
