- 8 oz pasta (linguine, spaghetti, or your choice)
- 2 salmon fillets, skinless
- 1 cup heavy cream
- 1 tbsp olive oil
- 2 cups mixed greens (spinach, arugula, etc.)
- 1/2 cup grated Parmesan cheese
- 2 cloves garlic, minced
- Salt and pepper to taste
- Lemon wedges for serving
Instructions
- Cook the pasta according to package instructions, then drain and set aside.
- While the pasta is cooking, heat olive oil in a pan over medium heat. Season the salmon fillets with salt and pepper, then cook for 4-5 minutes per side, until golden and cooked through. Remove from the pan and flake the salmon.
- In the same pan, sauté garlic for 1-2 minutes until fragrant. Add the heavy cream, bring to a simmer, and cook for 3-4 minutes.
- Stir in the Parmesan cheese, then add the mixed greens and let them wilt in the sauce.
- Add the cooked pasta and salmon to the pan, toss to combine, and heat through.
- Serve with a squeeze of lemon and extra Parmesan if desired.
Notes
- For a lighter version, you can substitute half-and-half for the heavy cream.
- Add more veggies like cherry tomatoes or peas to boost the freshness.
- Feel free to use other types of greens such as kale or baby spinach.
