This Creamy Salmon Pasta with Mixed Greens combines tender salmon, rich cream sauce, and fresh greens for a light yet satisfying meal. Perfect for a weeknight dinner or a special treat.


Ingredients

  • 8 oz pasta (linguine, spaghetti, or your choice)
  • 2 salmon fillets, skinless
  • 1 cup heavy cream
  • 1 tbsp olive oil
  • 2 cups mixed greens (spinach, arugula, etc.)
  • 1/2 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Lemon wedges for serving

Instructions

  • Cook the pasta according to package instructions, then drain and set aside.
  • While the pasta is cooking, heat olive oil in a pan over medium heat. Season the salmon fillets with salt and pepper, then cook for 4-5 minutes per side, until golden and cooked through. Remove from the pan and flake the salmon.
  • In the same pan, sauté garlic for 1-2 minutes until fragrant. Add the heavy cream, bring to a simmer, and cook for 3-4 minutes.
  • Stir in the Parmesan cheese, then add the mixed greens and let them wilt in the sauce.
  • Add the cooked pasta and salmon to the pan, toss to combine, and heat through.
  • Serve with a squeeze of lemon and extra Parmesan if desired.

Notes

  • For a lighter version, you can substitute half-and-half for the heavy cream.
  • Add more veggies like cherry tomatoes or peas to boost the freshness.
  • Feel free to use other types of greens such as kale or baby spinach.
