  • For the Soufflé:
    • 2 tablespoons unsalted butter (for greasing ramekins)
    • 2 tablespoons sugar (for dusting ramekins)
    • 3 large egg whites
    • 1/4 cup sugar (for meringue)
    • 1 cup heavy cream
    • 1 teaspoon vanilla extract

Instructions

  • Prepare the Ramekins:
    • Preheat your oven to 375°F (190°C). Grease four ramekins with butter and dust with sugar, ensuring even coverage. Set aside.
  • Make the Raspberry Purée:
    • In a blender or food processor, combine raspberries, 2 tablespoons of sugar, and lemon juice. Blend until smooth. Strain through a fine-mesh sieve to remove seeds, if desired.
  • Whip the Egg Whites:
    • In a clean bowl, beat the egg whites until frothy. Gradually add 1/4 cup of sugar and continue beating until stiff peaks form. The mixture should be glossy and hold its shape.
  • Whip the Cream:
    • In a separate bowl, whip the heavy cream with vanilla extract until soft peaks form. Gently fold the raspberry purée into the whipped cream.
  • Combine Mixtures:
    • Carefully fold the whipped egg whites into the raspberry and cream mixture, being gentle to maintain the airy texture.
  • Fill Ramekins:
    • Spoon the mixture into the prepared ramekins, filling them about three-quarters full.
  • Bake:
    • Place the ramekins in a baking dish and add hot water to the dish until it reaches halfway up the sides of the ramekins. Bake for 15-18 minutes, or until the soufflés are puffed and slightly golden.
  • Serve Immediately:
    • Remove from the oven and serve right away, as the soufflés will deflate quickly.
