Ingredients

Scale
  • 8 oz fettuccine or penne pasta
  • 1 cup canned pumpkin puree
  • 1 cup heavy cream
  • 1/2 cup freshly grated Parmesan cheese
  • 3 cloves garlic, minced
  • 1/4 tsp nutmeg
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 2 tablespoons butter

Instructions

  1. Cook the pasta in salted boiling water until al dente; drain, reserving 1 cup of pasta water.
  2. In a large skillet over medium heat, sauté minced garlic in butter or olive oil until fragrant (about 1 minute).
  3. Stir in pumpkin puree and heavy cream; mix until combined.
  4. Add Parmesan cheese, nutmeg, salt, and pepper; stir until creamy. If too thick, add reserved pasta water gradually.
