Ingredients
Scale
- 4 boneless chicken breasts
- 1 cup long-grain rice (uncooked)
- 1 cup chicken broth
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Sear the Chicken:
- In a large skillet, heat olive oil over medium-high heat. Season the chicken breasts with salt and pepper. Add them to the skillet and sear for about 5-7 minutes on each side until golden brown and cooked through. Remove from the skillet and set aside.
- Sauté the Garlic:
- In the same skillet, add minced garlic and sauté for about 1 minute until fragrant.
- Cook the Rice:
- Stir in the rice, chicken broth, heavy cream, and Italian seasoning. Bring to a boil, then reduce heat to low, cover, and simmer for about 15 minutes or until the rice is tender and the liquid is absorbed.
- Combine Everything:
- Once the rice is cooked, stir in the grated Parmesan cheese until melted and creamy. Return the seared chicken to the skillet and nestle it into the rice. Cover and cook for an additional 5 minutes to heat through.
- Serve:
- Garnish with chopped parsley and serve warm. Enjoy your delicious one-pan meal!
