Ingredients

Scale
  • 3-4 boneless, skinless chicken breasts (about 1 lb)
  • 2 cups elbow macaroni
  • 3 cups chicken broth
  • 1 cup heavy cream
  • 2 cups shredded mozzarella cheese
  • ½ cup grated parmesan cheese
  • ¼ cup fresh basil (chopped)
  • 1 tsp garlic powder
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Dice the chicken into bite-sized pieces; season with salt and pepper.
  2. In a large pot, heat olive oil over medium heat. Add chicken and sauté until golden brown (about 5 minutes).
  3. Stir in elbow macaroni and chicken broth. Bring to a simmer, stirring frequently.
  4. Once pasta absorbs most of the broth (about 8 minutes), mix in heavy cream, mozzarella, and parmesan cheese until melted.
  5. Add garlic powder and fresh basil; adjust seasoning with salt and pepper as needed.
  6. Serve hot, garnished with extra parmesan if desired.
