Ingredients

  • 4 chicken thighs, bone-in and skin-on
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 1 cup mushrooms, sliced (button or cremini)
  • 4 garlic cloves, minced
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 teaspoon dried thyme (or 1 tablespoon fresh thyme)
  • 1 teaspoon Dijon mustard
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Prepare the Chicken:
    Season the chicken thighs generously with salt and pepper on both sides.
  2. Sear the Chicken:
    In a large skillet, heat olive oil over medium-high heat. Add the chicken thighs, skin-side down, and cook for 6-7 minutes until golden brown. Flip and cook for an additional 5-6 minutes. Remove the chicken from the skillet and set aside.
  3. Cook the Mushrooms:
    In the same skillet, melt butter. Add the sliced mushrooms and sauté for about 5 minutes until they are browned and tender. Add minced garlic and cook for another minute until fragrant.
  4. Make the Sauce:
    Pour in the chicken broth and scrape the bottom of the skillet to deglaze. Stir in the heavy cream, thyme, and Dijon mustard. Bring to a simmer and let it cook for about 2-3 minutes.
  5. Combine Chicken and Sauce:
    Return the chicken thighs to the skillet, spooning the sauce over them. Reduce the heat to low and cover the skillet. Let simmer for 15-20 minutes, or until the chicken is cooked through (internal temperature should reach 165°F or 75°C).
  6. Garnish and Serve:
    Once the chicken is cooked, garnish with fresh parsley. Serve hot over pasta, rice, or with a side of crusty bread to soak up the creamy sauce.
