- 4-6 bone-in, skin-on chicken thighs
- 8 oz fresh mushrooms, sliced
- 4-6 cloves garlic, minced
- 1 medium onion, diced
- 1 cup low-sodium chicken broth
- 1 cup heavy cream
- 2 tbsp olive oil
- 2 tbsp butter
- Salt and pepper to taste
- Fresh herbs (thyme or parsley) for garnish
Instructions
- Prepare Chicken: Pat chicken thighs dry and season with salt and pepper.
- Sear: In a hot skillet, heat olive oil and butter. Sear chicken thighs skin-side down for 5-7 minutes, then flip and cook for another 5 minutes. Remove and set aside.
- Sauté Aromatics: In the same skillet, cook onion for 3-4 minutes, then add garlic and mushrooms. Sauté until mushrooms are tender.
- Make Sauce: Add chicken broth, scraping the pan. Stir in heavy cream and let simmer for 3-5 minutes until thickened.
- Combine: Return chicken to the skillet, spoon sauce over it, and simmer for 10-15 minutes until fully cooked.
- Serve: Garnish with fresh herbs and enjoy!
