  • 1 package (3 oz) sugar-free Jello (any flavor)
  • 1 cup heavy cream
  • 2 tbsp powdered erythritol (or sweetener of your choice)
  • 1 tsp vanilla extract (optional)

Instructions

  1. Prepare the Jello: In a medium bowl, dissolve the sugar-free Jello in 1 cup of boiling water. Stir until fully dissolved. Let it cool to room temperature, then refrigerate for about 1-2 hours, or until it’s firm but not fully set.
  2. Whip the Cream: In a separate bowl, use an electric mixer to whip the heavy cream, powdered erythritol, and vanilla extract (if using) until soft peaks form. Be careful not to overwhip.
  3. Combine: Once the Jello is firm, break it up with a fork to loosen it. Fold the whipped cream into the Jello gently until the mixture is smooth and fluffy.
  4. Chill: Return the mixture to the fridge for about 1 hour to firm up further before serving.

Notes

  • Make sure the Jello is completely set before folding in the whipped cream to get the desired texture.
  • Adjust the sweetness by adding more or less erythritol, depending on your taste.
  • You can use any sugar-free Jello flavor you prefer, such as strawberry, raspberry, or lime for variety.
