Ingredients
Scale
- 4 cups fresh corn kernels (or frozen)
- 2 medium russet potatoes, diced
- 4 slices bacon, chopped
- 1 medium yellow onion, chopped
- 2 cloves garlic, minced
- 4 cups low-sodium chicken broth
- 1 cup heavy cream
- Salt and pepper to taste
Instructions
- Cook the bacon in a large pot over medium heat until crispy. Remove and drain on paper towels, keeping the fat in the pot.
- Sauté onions in the bacon fat until translucent (about 5 minutes). Add garlic and cook for another minute.
- Add diced potatoes and chicken broth; bring to a boil. Reduce heat and simmer for 10-15 minutes until potatoes are tender.
- Stir in corn and simmer for an additional 5 minutes.
- Use an immersion blender to puree part of the soup for creaminess while leaving some chunks for texture. Alternatively, blend half the soup in a regular blender and return it to the pot.
- Mix in heavy cream, salt, and pepper; cook gently for another 5 minutes before serving.
