Ingredients
- Chicken breasts (2 medium-sized, boneless, skinless)
- Olive oil (2 tbsp)
- Salt and pepper (to taste)
- Butter (2 tbsp)
- Mushrooms (8 oz, sliced)
- Garlic (2 cloves, minced)
- Heavy cream (1 cup)
- Chicken broth (½ cup)
- Parmesan cheese (½ cup, grated)
- Italian seasoning (1 tsp)
- Pasta (8 oz, any type)
- Fresh parsley (optional, for garnish)
Instructions
- Cook the Pasta: Boil pasta in salted water according to package directions. Reserve 1 cup of pasta water before draining.
- Cook the Chicken: Heat olive oil in a large skillet over medium-high heat. Season chicken with salt and pepper, then cook for 5-6 minutes per side until golden brown and cooked through. Remove, rest, and slice.
- Sauté the Mushrooms: In the same skillet, melt butter. Add mushrooms and sauté for 5-6 minutes until golden. Add garlic and cook for 1-2 minutes.
- Make the Sauce: Pour in chicken broth and let it simmer for 2-3 minutes. Add heavy cream, Parmesan cheese, and Italian seasoning. Simmer for 5 minutes, stirring until thickened.
- Combine: Add the cooked pasta and sliced chicken to the skillet. Toss to coat in the sauce, adding reserved pasta water if needed to reach desired sauce consistency.
- Serve: Garnish with parsley and extra Parmesan if desired.
Notes
- Pasta Choice: Any pasta works well—try fettuccine, penne, or spaghetti.
- Add Veggies: Add spinach, peas, or broccoli for extra flavor and nutrition.
- Cream Substitutes: For a lighter option, substitute heavy cream with half-and-half or whole milk.
