- 1 lb (450 g) chicken breast, cooked and shredded
- 1 package (16 oz) gnocchi
- 2 cups spinach leaves, roughly chopped
- 1 cup carrots, diced
- 1 cup celery, diced
- 1 small onion, diced
- 4 cups chicken broth
- 2 cups heavy cream
- 2 tbsp olive oil
- 2 cloves garlic, minced
- Salt and pepper to taste
Instructions
- Sauté the Vegetables: Heat olive oil in a large pot over medium heat. Add onions, carrots, celery, and garlic. Sauté until softened.
- Add Broth and Chicken: Stir in the chicken broth and bring to a boil. Add the shredded chicken and gnocchi. Cook for 5-7 minutes until gnocchi is tender.
- Finish with Cream and Spinach: Reduce heat to low, stir in the heavy cream, and add spinach. Simmer for 2-3 minutes until the spinach wilts.
- Season and Serve: Season with salt and pepper to taste. Serve hot with crusty bread.
