Ingredients

Scale
  • 2 tbsp olive oil
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 2 medium carrots, sliced
  • 2 stalks celery, diced
  • 4 cups vegetable broth (or chicken broth)
  • 2 medium potatoes, peeled and cubed
  • Salt and pepper to taste
  • 1 tsp dried thyme
  • 2 bay leaves
  • 2 cups chopped kale or spinach

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté the onion until translucent (about 5 minutes). Add garlic and sauté for an additional minute.
  2. Stir in the carrots and celery; cook for about 5 minutes until slightly tender.
  3. Pour in the broth and bring to a gentle boil, scraping any bits from the bottom.
  4. Add potatoes, salt, pepper, thyme, and bay leaves. Lower heat to simmer for 20 minutes or until potatoes are fork-tender.
  5. Stir in kale or spinach during the last 5 minutes of cooking.
  6. Serve warm with crusty bread.
