Ingredients

Scale
  • 1 cup Arborio rice
  • 2 cups fresh mixed mushrooms (shiitake and cremini)
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 4 cups low-sodium vegetable broth
  • 1 cup grated Parmesan cheese
  • 2 tbsp extra virgin olive oil

  2. Stir in fresh mushrooms and dried thyme; cook until mushrooms release moisture (approximately 5 minutes).
  3. Add Arborio rice, stirring for about 2 minutes to toast the grains.
  4. Gradually add warm vegetable broth one ladle at a time, stirring constantly until absorbed before adding more.
  5. Continue adding broth until rice is tender yet al dente (approximately 20 minutes), stirring frequently.
  6. Remove from heat and stir in grated Parmesan cheese until melted. Serve immediately with extra cheese on top.
