  • 1 lb beef sirloin, cut into bite-sized pieces
  • 1 lb Brussels sprouts, trimmed and halved
  • 3 tbsp extra virgin olive oil
  • 4 cloves garlic, minced
  • 3 tbsp low-sodium soy sauce
  • Salt and pepper, to taste
  • 1 tsp dried thyme

Instructions

  1. Prepare your ingredients by washing and halving the Brussels sprouts and cutting the beef sirloin into bite-sized pieces.
  2. Heat a large skillet over medium-high heat and add 2 tablespoons of olive oil until shimmering.
  3. Sear the beef sirloin in a single layer for about 3 minutes on each side until golden brown. Remove from skillet and set aside.
  4. In the same skillet, add another tablespoon of olive oil if needed, sauté the minced garlic for about 30 seconds.
  5. Add the halved Brussels sprouts; season with salt and pepper. Cook for 5-7 minutes until golden brown.
  6. Return the cooked beef to the skillet, add soy sauce and dried thyme, stir well, and let simmer on low heat for an additional 3 minutes.
  7. Serve warm drizzled with any remaining sauce.
