- 2 bay leaves

Instructions
- Heat olive oil in a large pot over medium heat. Add beef and brown on all sides (about 5 minutes). Remove and set aside.
- In the same pot, sauté onions, carrots, celery, and garlic until softened (about 5 minutes).
- Deglaze the pot with half a cup of beef broth, scraping up any browned bits. Return the beef to the pot.
- Stir in remaining broth, pearl barley, bay leaves, salt, and pepper. Bring to a boil.
- Reduce heat to low, cover, and simmer for about an hour until everything is tender.
