  • 1 cup diced butternut squash
  • 1 cup halved Brussels sprouts
  • 2 cups chopped kale
  • 1/2 cup dried cranberries
  • 1/3 cup crumbled feta cheese
  • 1/4 cup toasted pecans or walnuts
  • 3 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Cook grains according to package instructions (quinoa: rinse and boil in salted water for about 15 minutes; farro: cook for about 30–40 minutes).
  2. Preheat oven to 425°F (220°C). Toss butternut squash and Brussels sprouts with olive oil, salt, and pepper on a baking sheet. Roast for 25–30 minutes until golden.
  3. Remove stems from kale, tear into pieces, drizzle with olive oil, sprinkle salt, and massage until softened.
  4. Assemble the bowl by layering grains at the bottom, followed by roasted veggies and kale.
  5. Top with cranberries, feta cheese, and toasted nuts.
  6. Serve immediately or enjoy cold as a salad.
