- Cilantro (¼ cup, chopped)
- Avocado (1, diced)
- Lime juice (3 tablespoons)
- Olive oil (2 tablespoons)
- Red wine vinegar (2 tablespoons)
- Honey or agave syrup (1 tablespoon)
- Cumin (1 teaspoon)
- Salt and pepper (to taste)
Instructions
- Prepare the Vegetables: Dice the tomatoes, bell peppers, red onion, and avocado. Chop the cilantro.
- Mix the Base: In a large bowl, combine black beans, black-eyed peas, corn, and prepared vegetables.
