Description

The Coronation Victoria Sponge is a traditional British cake, featuring two light and fluffy sponge layers filled with jam and whipped cream. This elegant and simple cake is perfect for celebrating any occasion or enjoying with a cup of tea.

  • For the cake:
    • 1 cup (200g) unsalted butter, softened
    • 1 cup (200g) caster sugar
    • 4 large eggs
    • 2 cups (240g) self-raising flour
    • 2 tsp baking powder
    • 1/2 cup (120ml) milk
    • 1 tsp vanilla extract
  • For the filling:
    • 1 cup (240ml) double cream
    • 2 tbsp powdered sugar
    • 1/2 cup (120g) raspberry jam (or strawberry, if preferred)
  • For decoration:
    • Icing sugar for dusting

Instructions

  1. Preheat the oven:
    Preheat your oven to 350°F (175°C). Grease and line two 8-inch (20 cm) round cake pans with parchment paper.
  2. Make the sponge: In a large bowl, cream together the butter and sugar until light and fluffy. This should take about 3-4 minutes using an electric mixer. Add the eggs one at a time, beating well after each addition.
  3. Add dry ingredients: Sift the self-raising flour and baking powder into the bowl, then fold them into the wet mixture gently, alternating with the milk. Add the vanilla extract and mix until everything is combined.
  4. Bake: Divide the batter evenly between the two prepared cake pans and smooth the tops. Bake in the preheated oven for 25-30 minutes or until a skewer inserted into the center of the cakes comes out clean. Let the cakes cool in the pans for 10 minutes before transferring to a wire rack to cool completely.
  5. Prepare the filling: While the cakes cool, whip the double cream with the powdered sugar until soft peaks form. Set aside.
  6. Assemble the cake: Once the cakes are completely cool, spread the raspberry jam on top of one of the sponge layers. Then, spread the whipped cream on top of the jam. Carefully place the second cake layer on top and press down gently to secure.
  7. Decorate: Dust the top of the cake with icing sugar for a finishing touch.

  • Customization: Feel free to substitute the raspberry jam with your favorite fruit preserve, such as strawberry or apricot, to suit your taste.
