  • Salt and pepper, to taste

Instructions

  1. Boil diced potatoes in salted water until fork-tender (5-7 minutes). Drain and rinse under cold water.
  2. Melt butter in a skillet over medium heat. Sauté onion and garlic until translucent (about 5 minutes).
  3. Add corned beef and potatoes to the skillet. Spread into an even layer and cook without stirring to form a golden crust.
  4. Season with paprika, thyme, salt, and pepper. Flip sections to brown the other side. Cook until crispy and heated through (10-15 minutes total).
  5. Garnish with parsley and serve with poached or fried eggs if desired.
