For the Cornbread:
- 1 cup cornmeal
- 1 cup all-purpose flour
- 1/4 cup granulated sugar
- 1 tablespoon baking powder

- 1 cup buttermilk
- 1/4 cup vegetable oil
- 2 large eggs
For the Dressing:
- 2 tablespoons unsalted butter
- 1 large onion, finely chopped
- 2 celery stalks, finely chopped
- 2 cloves garlic, minced
- 2 cups chicken or vegetable broth
- 1 teaspoon dried sage
- 1 teaspoon dried thyme
- 1/2 teaspoon dried rosemary
- Salt and pepper to taste
- 2 cups crumbled cornbread (from the recipe above)
- 1/2 cup chopped fresh parsley (optional)
Instructions
- Prepare the Cornbread:
- Preheat the oven to 220°C (425°F). Grease a 9-inch square baking pan or skillet.
- In a large bowl, mix together cornmeal, flour, sugar, baking powder, and salt.
- In another bowl, whisk together buttermilk, vegetable oil, and eggs. Pour the wet ingredients into the dry ingredients and stir until just combined.
- Pour the batter into the prepared pan and bake for 20-25 minutes, or until golden brown and a toothpick inserted into the center comes out clean. Let cool before crumbling.
- Prepare the Dressing:
- Melt butter in a large skillet over medium heat. Add the chopped onion and celery and cook until softened, about 5-7 minutes. Add minced garlic and cook for another minute.
- In a large mixing bowl, combine the crumbled cornbread with the cooked vegetables. Stir in the chicken or vegetable broth gradually until the mixture is moist but not soggy.
- Add sage, thyme, rosemary, salt, and pepper. Stir until well combined. If using, mix in the chopped fresh parsley.
- Bake the Dressing:
- Preheat the oven to 180°C (350°F). Transfer the dressing mixture to a greased baking dish.
- Bake for 30-35 minutes, or until the top is golden brown and crispy.
- Serve:
- Serve warm as a side dish with your favorite main course.
Notes
- For extra richness, you can add a cup of cooked and crumbled sausage to the dressing mixture.
- If you prefer a slightly moist dressing, adjust the amount of broth according to your preference.
