Description

This Cookies and Cream Cake is a dreamy, delicious dessert featuring layers of soft, moist cake filled with crushed cookies and topped with a rich, creamy frosting. It’s perfect for any celebration or as a sweet treat for cookie lovers.

Ingredients

Scale
  • For the Cake:
    • 2 cups all-purpose flour
    • 1 ½ cups granulated sugar
    • 1 teaspoon baking powder
    • ½ teaspoon baking soda
    • ½ teaspoon salt
    • 1 cup unsweetened cocoa powder
    • 1 cup whole milk
    • 2 large eggs
    • 1 teaspoon vanilla extract
    • ½ cup vegetable oil
    • 1 cup boiling water
    • 1 cup crushed chocolate sandwich cookies (like Oreos)
  • For the Frosting:
    • 1 cup unsalted butter (softened)
    • 4 cups powdered sugar
    • ¼ cup milk (more if needed)
    • 1 teaspoon vanilla extract
    • ½ cup crushed chocolate sandwich cookies (for garnish)

Instructions

  1. Preheat the Oven:
Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans or line them with parchment paper.
  2. Make the Cake Batter:
In a large bowl, whisk together the flour, sugar, baking powder, baking soda, salt, and cocoa powder. Add the milk, eggs, vanilla extract, and vegetable oil, and mix until smooth. Gradually add the boiling water and mix until the batter is well combined—it will be thin. Gently fold in the crushed cookies.
  3. Bake the Cake:
Pour the batter evenly into the prepared cake pans. Bake for 30-35 minutes or until a toothpick inserted into the center of the cakes comes out clean. Let the cakes cool in the pans for 10 minutes, then transfer them to a wire rack to cool completely.
  4. Make the Frosting:
In a large bowl, beat the softened butter until creamy. Gradually add the powdered sugar, 1 cup at a time, and mix well after each addition. Add milk, vanilla extract, and beat until smooth and fluffy. If the frosting is too thick, add more milk to reach your desired consistency.
  5. Assemble the Cake:
Place one layer of the cake on a serving plate and spread a generous amount of frosting on top. Add the second layer of cake and cover the entire cake with the remaining frosting. Garnish the top with crushed cookies.
  6. Serve:
Slice and serve this delicious cake at room temperature for the best taste and texture.

Notes

  • If you prefer a stronger cookie flavor, add more crushed cookies into the batter or frosting.
  • For an extra indulgent treat, you can drizzle melted chocolate over the cake before serving.
  • Be sure to let the cake cool completely before frosting to prevent melting the frosting.
