  • 14 oz can diced tomatoes
  • 4 cups chicken broth
  • 2 tsp Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Prepare your ingredients by chopping the vegetables and mincing the garlic.
  2. In a large pot over medium heat, sauté onions, carrots, and celery in olive oil for about five minutes until softened. Add garlic and cook until fragrant.
  3. Brown the chicken thighs in the pot for approximately five minutes on each side until golden.
  4. Add diced tomatoes and chicken broth to the pot; stir in Italian seasoning. Bring to a simmer.
