Ingredients
Scale
- 4 boneless, skinless chicken breasts
- 1 tablespoon olive oil
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 tablespoon ginger, grated
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon turmeric
- 1/2 teaspoon chili powder (adjust to taste)
- 1 can (14 oz) coconut milk
- 1/2 cup chicken broth
- 1/2 cup fresh basil, chopped
- 1 tablespoon lime juice
- 2 cups cooked rice (white, brown, or jasmine)
Instructions
- Prepare the Rice: Begin by cooking your rice according to package instructions and set aside.
- Cook the Chicken: In a large skillet, heat olive oil over medium heat. Season chicken breasts with salt and pepper, then cook for 6-7 minutes on each side until browned and fully cooked. Remove from the pan and set aside.
- Prepare the Sauce: In the same skillet, add chopped onion and cook for 3-4 minutes until softened. Add garlic and ginger, cooking for another minute. Sprinkle in cumin, coriander, turmeric, and chili powder. Stir well and cook for 1-2 minutes.
- Add Liquids: Pour in coconut milk and chicken broth. Stir to combine, scraping any browned bits from the bottom of the pan.
- Combine Chicken & Sauce: Return the chicken to the skillet and simmer in the sauce for about 5 minutes, allowing the flavors to meld.
- Finish the Dish: Stir in fresh basil and lime juice. Taste and adjust seasoning as needed.
- Serve: Serve the chicken and sauce over the cooked rice. Garnish with extra basil, if desired.
Notes
- Spice Level: Adjust the chili powder to your preferred spice level. You can use a milder or hotter variety depending on your taste.
