For the Meat Sauce:
- 2 tablespoons olive oil
- 1 medium onion, finely chopped

- 1 medium carrot, finely chopped
- 1 celery stalk, finely chopped
- 1 pound ground beef
- 1 pound ground pork
- 1 can (28 ounces) crushed tomatoes
- 2 tablespoons tomato paste
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and pepper to taste
For the Béchamel Sauce:
- 4 tablespoons unsalted butter
- 1/4 cup all-purpose flour
- 4 cups whole milk
- Freshly grated nutmeg (to taste)
- Salt to taste
Instructions
- Prepare the Meat Sauce: Heat olive oil in a skillet. Sauté onions, garlic, carrot, and celery until softened. Add ground meats and cook until browned. Stir in tomatoes, tomato paste, herbs, salt, and pepper. Simmer for 30-40 minutes.
- Make the Béchamel: In a saucepan, melt butter, whisk in flour, and cook for 2 minutes. Gradually add milk, whisking until thickened. Season with nutmeg and salt.
- Assemble the Lasagna: Preheat the oven to 375°F (190°C). Spread meat sauce in a baking dish, layer with noodles, béchamel, and cheeses. Repeat until all ingredients are used, finishing with béchamel and mozzarella on top.
- Bake: Cover with foil and bake for 25 minutes. Remove foil and bake for an additional 15-20 minutes until golden. Let it rest before slicing.

- For a vegetarian version, substitute meat with sautéed vegetables or plant-based meat.
- Lasagna can be made ahead and stored in the fridge for up to a day before baking or frozen for up to three months.
