Ingredients
For the Chowder:
- 4 slices bacon, diced
- 1 small onion, diced
- 2 stalks celery, diced
- 2 large potatoes, peeled and diced
- 2 cans (6.5 oz each) chopped clams, with juice
- 2 cups clam juice (or chicken broth)
- 1 cup heavy cream
- 1 teaspoon dried thyme
- Salt and pepper, to taste
- Fresh parsley, for garnish (optional)

Cook the Bacon: In a large pot, cook the diced bacon over medium heat until crispy. Remove with a slotted spoon and set aside, leaving the bacon fat in the pot.

Sauté Vegetables: Add the diced onion and celery to the pot and sauté for about 5 minutes until softened. Stir in the diced potatoes and cook for another 5 minutes.

Add Liquids: Pour in the clam juice and the juice from the canned clams. Bring to a simmer and cook for about 15 minutes, or until the potatoes are tender.

Add Clams and Cream: Stir in the chopped clams, heavy cream, thyme, salt, and pepper. Cook for an additional 5 minutes, allowing the chowder to thicken slightly.

Notes
- For a thicker chowder, you can mash some of the potatoes with a fork before adding the clams and cream.
