For the crust:

  • 1 ½ cups graham cracker crumbs
  • ½ cup cinnamon cereal, crushed
  • ¼ cup melted butter
  • 2 tbsp sugar

For the filling:

  • 16 oz (2 packages) cream cheese, softened
  • 1 cup sour cream
  • ½ cup powdered sugar
  • 1 tsp vanilla extract
  • 1 tsp ground cinnamon

For the topping:

  • 1 cup cinnamon cereal, crushed
  • 2 tbsp melted butter
  • 2 tbsp sugar

Instructions

  • Prepare the crust: Preheat the oven to 325°F (160°C). In a medium bowl, mix the graham cracker crumbs, cinnamon cereal, melted butter, and sugar until combined. Press the mixture into the bottom of a 9-inch springform pan. Bake for 8 minutes, then remove and let cool completely.
  • Make the filling: Beat softened cream cheese in a large bowl until smooth. Add sour cream, powdered sugar, vanilla, and cinnamon, then mix until fully combined. Pour the cheesecake mixture into the cooled crust and smooth the top with a spatula.
  • Chill the cheesecake: Cover the pan and refrigerate for at least 4 hours, or preferably overnight, until the cheesecake is fully set.
  • Make the topping: In a small bowl, combine crushed cinnamon cereal, melted butter, and sugar. Stir until evenly coated. Just before serving, sprinkle the topping over the chilled cheesecake.
  • Serve: Slice the cheesecake, serve, and enjoy
