For the Churros Dough:
- 1 cup water
- 2 tablespoons unsalted butter

- 1 cup all-purpose flour
- 2 large eggs

For the Cinnamon Sugar Coating:
- 1/2 cup granulated sugar
- 1 tablespoon ground cinnamon
For Frying:
- Vegetable oil (about 2-3 cups)
Instructions
- Prepare the Dough:
In a medium saucepan, combine 1 cup water, 2 tablespoons butter, 1 tablespoon sugar, and 1/2 teaspoon salt. Bring to a boil, then remove from heat and stir in 1 cup of flour. Mix until the dough forms and pulls away from the sides of the pan. - Add Eggs:
Allow the dough to cool slightly, then mix in 2 eggs one at a time, stirring until smooth. Stir in 1/2 teaspoon vanilla extract. The dough should be thick and slightly sticky. - Heat the Oil:
Heat 2-3 cups of vegetable oil in a large pot over medium heat to 350°F (175°C). - Pipe and Fry:
Transfer the dough to a piping bag fitted with a large star nozzle. Pipe the dough into small, bite-sized pieces (1-1.5 inches long) into the hot oil. Fry for 2-3 minutes per side or until golden brown and crispy. Remove and drain on paper towels. - Coat with Cinnamon Sugar:
In a small bowl, combine 1/2 cup sugar and 1 tablespoon cinnamon. While the poppers are still warm, roll them in the cinnamon sugar mixture until fully coated. - Serve:
Serve immediately while warm, or enjoy with a dipping sauce like chocolate or caramel for extra indulgence.
