For the Churros Dough:

  • 1 cup water
  • 2 tablespoons unsalted butter
  • 1 tablespoon granulated sugar
  • 1/2 teaspoon salt
  • 1 cup all-purpose flour
  • 2 large eggs
  • 1/2 teaspoon vanilla extract

For the Cinnamon Sugar Coating:

  • 1/2 cup granulated sugar
  • 1 tablespoon ground cinnamon

For Frying:

  • Vegetable oil (about 2-3 cups)

Instructions

  • Prepare the Dough:
    In a medium saucepan, combine 1 cup water, 2 tablespoons butter, 1 tablespoon sugar, and 1/2 teaspoon salt. Bring to a boil, then remove from heat and stir in 1 cup of flour. Mix until the dough forms and pulls away from the sides of the pan.
  • Add Eggs:
    Allow the dough to cool slightly, then mix in 2 eggs one at a time, stirring until smooth. Stir in 1/2 teaspoon vanilla extract. The dough should be thick and slightly sticky.
  • Heat the Oil:
    Heat 2-3 cups of vegetable oil in a large pot over medium heat to 350°F (175°C).
  • Pipe and Fry:
    Transfer the dough to a piping bag fitted with a large star nozzle. Pipe the dough into small, bite-sized pieces (1-1.5 inches long) into the hot oil. Fry for 2-3 minutes per side or until golden brown and crispy. Remove and drain on paper towels.
  • Coat with Cinnamon Sugar:
    In a small bowl, combine 1/2 cup sugar and 1 tablespoon cinnamon. While the poppers are still warm, roll them in the cinnamon sugar mixture until fully coated.
  • Serve:
    Serve immediately while warm, or enjoy with a dipping sauce like chocolate or caramel for extra indulgence.

  • Frying Tip: Be careful not to overcrowd the pan when frying to ensure the poppers cook evenly.
  • Storage: Churros poppers are best eaten fresh but can be stored in an airtight container at room temperature for up to 1 day. Reheat in the oven at 350°F for 5-7 minutes to restore crispness.
