For the Cake:
- 1 ¾ cups all-purpose flour
- 1 ½ cups granulated sugar
- ¾ cup unsweetened cocoa powder
- 1 ½ tsp baking powder

- 2 large eggs
- 1 cup whole milk
- ½ cup vegetable oil
- 2 tsp vanilla extract
- 1 cup boiling water
For the Oreo Filling:
- 1 cup heavy cream
- 8 oz cream cheese, softened
- ½ cup powdered sugar
- 1 cup crushed Oreos
For the Ganache:
- 1 cup heavy cream
- 8 oz semi-sweet chocolate, chopped
Instructions
- Prepare the Oven and Pans: Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
- Make the Cake Batter: In a large mixing bowl, combine flour, sugar, cocoa powder, baking powder, baking soda, and salt. Add eggs, milk, oil, and vanilla. Mix until smooth, then stir in boiling water. The batter will be thin.
- Bake the Cakes: Divide the batter evenly between the prepared pans. Bake for 30-35 minutes or until a toothpick inserted into the center comes out clean. Let the cakes cool in the pans for 10 minutes before transferring to a wire rack to cool completely.
- Prepare the Oreo Filling: In a mixing bowl, whip the heavy cream until stiff peaks form. In another bowl, beat the cream cheese and powdered sugar until smooth. Fold in the whipped cream and crushed Oreos until well combined.
- Make the Ganache: Heat the heavy cream in a saucepan until just boiling. Pour over the chopped chocolate and let it sit for 5 minutes. Stir until smooth.
- Assemble the Cake: Once the cakes are completely cool, place one layer on a serving plate. Spread half of the Oreo filling on top. Place the second layer on top and spread the remaining filling. Pour ganache over the top, allowing it to drip down the sides.
- Chill and Serve: Refrigerate for at least 30 minutes to set. Slice and enjoy!
