  • 1/4 cup honey or maple syrup (or preferred sweetener)
  • 2 large eggs
  • 1/4 cup coconut oil or vegetable oil (melted)
  • 1 tsp vanilla extract
  • 1 tsp baking soda
  • 1/2 tsp ground cinnamon
  • 1/4 tsp salt

Instructions

  1. Preheat oven to 350°F (175°C) and grease or line a muffin tin with paper liners.
  2. In a large bowl, mash the bananas until smooth. Stir in the grated zucchini (after squeezing out excess moisture) and mix well.
  3. In a separate bowl, whisk together the dry ingredients: flour, oats, baking soda, cinnamon, and salt.
  4. Add the dry ingredients to the wet ingredients, mixing until just combined.
  5. Stir in the chocolate chips and honey or maple syrup, followed by the eggs and vanilla extract.
  6. Spoon the batter evenly into the muffin tin (about 3/4 full per cup).
  7. Bake for 20-25 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  8. Allow the muffins to cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
