This Chicken and Spinach Casserole with Cream Cheese combines juicy chicken, creamy cheese, and savory spinach for a comforting, hearty meal. It’s easy to make and perfect for any occasion.
Ingredients
Scale
- 3 cups cooked, shredded chicken (rotisserie chicken works well)
- 4 cups fresh spinach (or 2 cups frozen spinach, thawed and drained)
- 8 oz cream cheese, softened
- 1/2 cup sour cream
- 1/2 cup mayonnaise
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon smoked paprika
- Salt and pepper, to taste
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
Instructions
- Preheat the Oven: Preheat your oven to 375°F (190°C).
- Prepare the Spinach: If using fresh spinach, sauté it in a pan over medium heat with a splash of olive oil for 2-3 minutes, until wilted. For frozen spinach, thaw and squeeze out excess water.
- Make the Sauce: In a large bowl, combine cream cheese, sour cream, mayonnaise, garlic powder, onion powder, paprika, salt, and pepper. Mix until smooth and creamy.
- Combine Chicken and Spinach: Add the shredded chicken and spinach to the creamy sauce. Stir to combine evenly.
- Assemble the Casserole: Transfer the chicken-spinach mixture into a greased 9x13-inch baking dish. Top with shredded mozzarella and Parmesan cheese.
- Bake: Place the casserole in the preheated oven and bake for 25-30 minutes, or until the cheese is melted and bubbly. For a crispy top, broil for the last 2-3 minutes.
- Serve: Let the casserole rest for a few minutes before serving.
