  • 4 bone-in, skin-on chicken thighs
  • 2 Italian sausages (mild or spicy)
  • 1 tbsp olive oil (for searing)
  • Salt and pepper, to taste
  • 1 medium onion, thinly sliced
  • 1 bell pepper, sliced
  • 4 cloves garlic, minced
  • 1 cup chicken broth
  • 1 tbsp lemon juice
  • 1 tsp dried oregano
  • ½ tsp red pepper flakes (optional)
  • Fresh parsley, chopped (for garnish)

Instructions

  • Sear the Chicken: Heat olive oil in a large skillet over medium-high heat. Season chicken thighs with salt and pepper, then sear, skin-side down, for 5-7 minutes until golden. Flip and cook for another 4-5 minutes. Remove and set aside.
  • Cook the Sausage: In the same skillet, add sausages and cook, turning occasionally, until browned on all sides (about 8-10 minutes). Remove and set aside.
  • Sauté Vegetables: Add sliced onion and bell pepper to the skillet, cooking for 5 minutes until softened. Add garlic and cook for another 1-2 minutes.
  • Build the Sauce: Pour in chicken broth, vinegar, and lemon juice. Stir in oregano and red pepper flakes. Let simmer for 2-3 minutes to meld the flavors.
  • Combine: Return the chicken and sausage to the skillet. Cover and simmer for 25-30 minutes until the chicken is cooked through (165°F internal temperature).
  • Serve: Garnish with fresh parsley. Serve with pasta, rice, or crusty bread.

Notes

  • You can use boneless, skinless chicken breasts for a leaner option.
  • To make this a one-pan meal, simply add vegetables and broth after browning the meat and cook everything together.
  • Leftovers store well in the fridge for up to 3 days and taste even better the next day.
