Ingredients

2 cups cooked chicken, diced
2 cups egg noodles
1 cup frozen peas and carrots
1/2 cup onions, chopped
1 can (10.5 oz) cream of chicken soup
1/2 cup milk
1/4 cup chicken broth
1 tbsp butter
1 tsp garlic powder
Salt and pepper to taste


Instructions

  • Cook the egg noodles according to package directions, then drain and set aside.
  • In a large skillet, melt the butter over medium heat. Add the onions and cook until softened, about 3-4 minutes.
  • Stir in the chicken, peas, and carrots, then add the cream of chicken soup, milk, and chicken broth. Stir until well combined.
  • Season with garlic powder, salt, and pepper. Let the mixture simmer for 5-7 minutes.
  • Add the cooked noodles to the skillet, mixing everything together until evenly coated.
  • Cook for an additional 3-4 minutes, stirring occasionally, and serve hot.

Notes

  • For a healthier version, use low-fat milk and a lighter cream of chicken soup.
  • You can also swap the chicken for leftover turkey for a festive twist.
  • Add some shredded cheese on top for extra flavor.
