Ingredients
- Chicken: 4 bone-in, skin-on chicken thighs (or 2 lbs chicken pieces)
- Onions: 2 medium, finely chopped
- Garlic: 3 cloves, minced
- Sweet Paprika: 2 tablespoons
- Smoked Paprika: 1 teaspoon
- Chicken Broth: 2 cups
- Sour Cream: 1 cup
- Olive Oil: 2 tablespoons
- Salt and Pepper: To taste
- Fresh Parsley: For garnish

- Sear the Chicken: In a large skillet, heat olive oil over medium-high heat. Season chicken with salt and pepper, then sear for about 5-7 minutes on each side until golden brown. Remove and set aside.
- Sauté Aromatics: In the same skillet, add chopped onions and sauté for 5-6 minutes until soft. Add minced garlic and cook for 1 more minute.
- Add Paprika: Stir in sweet and smoked paprika, cooking for 1 minute to release flavors.
- Combine Ingredients: Pour in chicken broth, scraping the bottom to deglaze. Return chicken to the skillet, cover, and simmer for 30 minutes or until fully cooked (165°F internal temperature).
- Finish with Sour Cream: Remove from heat. Temper the sour cream with a bit of the sauce, then stir it back into the skillet. Adjust seasoning to taste.
- Serve: Garnish with fresh parsley and serve over noodles, rice, or with crusty bread.
