Ingredients

  • For the Chicken Meatballs:
    • 1 lb ground chicken
    • ½ cup breadcrumbs
    • ¼ cup grated Parmesan cheese
    • 1 large egg
    • 2 cloves garlic, minced
    • 1 tsp Italian seasoning
    • Salt and pepper to taste
  • For the Cassoulet:
    • 1 tbsp olive oil
    • 1 large onion, diced
    • 2 carrots, diced
    • 2 celery stalks, diced
    • 3 cloves garlic, minced
    • 1 can (14 oz) diced tomatoes
    • 4 cups chicken broth
    • 1 can (15 oz) white beans (cannellini or Great Northern)
    • 2 sprigs fresh thyme
    • 1 bay leaf

Instructions

  • Make the Meatballs: In a bowl, combine ground chicken, breadcrumbs, Parmesan, egg, garlic, Italian seasoning, salt, and pepper. Mix gently and shape into meatballs (about 1 inch in diameter).
  • Brown the Meatballs: Heat olive oil in a skillet over medium heat. Add the meatballs and brown on all sides (about 5-7 minutes). Remove and set aside.
  • Sauté the Vegetables: In the same skillet, add onion, carrots, celery, and garlic. Sauté until softened (about 5-7 minutes).
  • Combine Ingredients: Add diced tomatoes, chicken broth, white beans, thyme, and bay leaf. Bring to a simmer.
  • Add Meatballs: Return the browned meatballs to the skillet. Cover and bake at 375°F (190°C) for 25-30 minutes until cooked through.
  • Serve: Remove the bay leaf and thyme stems before serving. Enjoy hot!
