- For the Cassoulet:
- 1 tbsp olive oil
- 1 large onion, diced
- 2 carrots, diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 1 can (14 oz) diced tomatoes
- 4 cups chicken broth
- 1 can (15 oz) white beans (cannellini or Great Northern)
- 2 sprigs fresh thyme
- 1 bay leaf
Instructions
- Make the Meatballs: In a bowl, combine ground chicken, breadcrumbs, Parmesan, egg, garlic, Italian seasoning, salt, and pepper. Mix gently and shape into meatballs (about 1 inch in diameter).
- Brown the Meatballs: Heat olive oil in a skillet over medium heat. Add the meatballs and brown on all sides (about 5-7 minutes). Remove and set aside.
- Sauté the Vegetables: In the same skillet, add onion, carrots, celery, and garlic. Sauté until softened (about 5-7 minutes).
- Combine Ingredients: Add diced tomatoes, chicken broth, white beans, thyme, and bay leaf. Bring to a simmer.
- Add Meatballs: Return the browned meatballs to the skillet. Cover and bake at 375°F (190°C) for 25-30 minutes until cooked through.
- Serve: Remove the bay leaf and thyme stems before serving. Enjoy hot!
