Description

Chicken Cacciatore is a classic Italian dish featuring tender chicken thighs simmered in a rich tomato sauce with bell peppers, onions, and herbs. This one-pot wonder is perfect for family dinners, offering bold flavors and comforting textures.

 


Ingredients

  • 4 bone-in, skinless chicken thighs
  • 2 tablespoons olive oil
  • 1 onion, thinly sliced
  • 1 bell pepper, thinly sliced
  • 3 cloves garlic, minced
  • 1 can (14.5 oz) crushed tomatoes
  • 1/2 cup chicken broth
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  • Brown the Chicken:
    Heat olive oil in a large skillet or Dutch oven over medium-high heat. Season the chicken thighs with salt and pepper. Brown the chicken for 4-5 minutes on each side until golden. Remove and set aside.
  • Sauté Vegetables:
    In the same skillet, add the onion, bell pepper, and garlic. Cook for 5 minutes until softened, stirring occasionally.
  • Add Liquids & Simmer:
    Pour in the crushed tomatoes, chicken broth, oregano, and basil. Stir to combine and bring to a simmer. Return the chicken to the skillet, skin-side up. Reduce heat to low and cover.
  • Simmer:
    Let the chicken simmer for 30-40 minutes, or until fully cooked and tender (internal temperature should reach 165°F). Stir occasionally to ensure the sauce doesn’t burn.
  • Serve:
    Remove the chicken from the sauce and let it rest for a few minutes. Serve the chicken with the sauce spooned over it, garnished with fresh parsley if desired. Pair with pasta, rice, or crusty bread.

Notes

  • Chicken Thighs: Bone-in, skinless thighs are preferred for their rich flavor and tenderness, but you can also use boneless thighs or chicken breasts, adjusting the cooking time accordingly.
  • Customizing the Sauce: Feel free to add other vegetables like mushrooms or zucchini for extra flavor and nutrition.
  • Make-Ahead: This dish tastes even better the next day, so consider making it ahead of time and reheating for a quick dinner.
