Description

This Chicken and Rice Taco Skillet is a one-pan wonder, packed with bold taco flavors and tender chicken. It’s quick, simple, and perfect for busy weeknights, making it a family-friendly favorite! With the delicious mix of seasoned chicken, fluffy rice, and melted cheese, this dish is sure to satisfy everyone at the table.


Ingredients

  • 1 lb boneless, skinless chicken breasts, diced
  • 1 tbsp olive oil
  • 1 medium onion, chopped
  • 1 bell pepper, chopped (any color)
  • 2 cloves garlic, minced
  • 1 cup long-grain white rice (uncooked)
  • 1 1/2 cups chicken broth
  • 1 packet taco seasoning (or 2 tbsp homemade taco seasoning)
  • 1/2 cup shredded cheddar cheese (optional for topping)
  • Salt and pepper, to taste
  • Lime wedges, for garnish (optional)
  • Chopped cilantro, for garnish (optional)

Instructions

  • Heat the Skillet: In a large skillet, heat olive oil over medium heat. Add the diced chicken and season with a pinch of salt and pepper. Cook for 5-7 minutes, until the chicken is browned and cooked through. Remove chicken from the skillet and set aside.
  • Cook the Vegetables: In the same skillet, add chopped onion and bell pepper. Sauté for 3-4 minutes until softened. Add garlic and cook for another 30 seconds until fragrant.
  • Cook the Rice: Stir in the uncooked rice, taco seasoning, and chicken broth. Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for 15-20 minutes, until the rice is tender and the liquid is absorbed.
  • Combine and Finish: Add the cooked chicken back into the skillet and mix to combine. If using, sprinkle shredded cheese over the top and cover to melt for 2-3 minutes. Garnish with fresh cilantro and lime wedges before serving

Notes

  • For a spicier kick, you can add a diced jalapeño or a sprinkle of chili powder.
  • You can swap out the chicken for ground turkey or beef if preferred.
  • If you don’t have taco seasoning on hand, use a combination of chili powder, cumin, paprika, garlic powder, and onion powder.
  • To make it a complete meal, add some black beans or corn to the skillet for added fiber and texture.
