- 1 tbsp olive oil
- 1 medium onion, chopped
- 1 bell pepper, chopped (any color)
- 2 cloves garlic, minced
- 1 cup long-grain white rice (uncooked)
- 1 1/2 cups chicken broth
- 1 packet taco seasoning (or 2 tbsp homemade taco seasoning)
- 1/2 cup shredded cheddar cheese (optional for topping)
- Salt and pepper, to taste
- Lime wedges, for garnish (optional)
- Chopped cilantro, for garnish (optional)
Instructions
- Heat the Skillet: In a large skillet, heat olive oil over medium heat. Add the diced chicken and season with a pinch of salt and pepper. Cook for 5-7 minutes, until the chicken is browned and cooked through. Remove chicken from the skillet and set aside.
- Cook the Vegetables: In the same skillet, add chopped onion and bell pepper. Sauté for 3-4 minutes until softened. Add garlic and cook for another 30 seconds until fragrant.
- Cook the Rice: Stir in the uncooked rice, taco seasoning, and chicken broth. Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for 15-20 minutes, until the rice is tender and the liquid is absorbed.
- Combine and Finish: Add the cooked chicken back into the skillet and mix to combine. If using, sprinkle shredded cheese over the top and cover to melt for 2-3 minutes. Garnish with fresh cilantro and lime wedges before serving

- For a spicier kick, you can add a diced jalapeño or a sprinkle of chili powder.
- You can swap out the chicken for ground turkey or beef if preferred.
