Ingredients

Scale
  • 2 ½ cups all-purpose flour
  • 1 ½ cups granulated sugar
  • 1 cup vegetable oil
  • 1 cup buttermilk
  • 3 large eggs (room temperature)
  • 2 tbsp cocoa powder (unsweetened)
  • 1 tsp baking soda
  • 1 tsp vanilla extract
  • 2 tbsp red food coloring
  • 8 oz cream cheese (softened)
  • ½ cup unsalted butter (softened)
  • 4 cups powdered sugar (sifted)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease two round cake pans with non-stick spray or butter and lightly dust with flour.
  2. In a large bowl, whisk together flour, cocoa powder, baking soda, and salt.
  3. In another bowl, mix sugar and oil until combined. Add buttermilk, eggs, food coloring, and vanilla extract; stir until smooth.
  4. Gradually combine the dry mixture into the wet mixture, stirring gently until just combined.
  5. Divide the batter evenly between prepared pans and bake for about 25-30 minutes or until a toothpick inserted in the center comes out clean.
  6. Let cakes cool for ten minutes in pans before transferring to wire racks to cool completely. For frosting, beat softened cream cheese and butter until fluffy; gradually add powdered sugar until desired sweetness is achieved.
  7. Layer cakes with frosting between them and generously cover the top and sides.
