Instructions
- In a large pot, heat the olive oil over medium heat. Add the onions and garlic, and sauté until soft and fragrant (about 5 minutes).
- Add the chopped carrots and vegetable broth to the pot. Bring to a boil, then reduce heat and simmer for 20 minutes, or until the carrots are tender.
- Use an immersion blender to blend the soup until smooth. Alternatively, transfer the soup in batches to a blender.
- Season with salt and pepper to taste. For a creamier soup, stir in the coconut milk or cream.
