  • 1 cup whole wheat flour
  • 1 tsp baking powder
  • 1 tsp ground cinnamon
  • ½ tsp ground nutmeg
  • ¼ tsp salt
  • 2 large eggs
  • 1 cup unsweetened applesauce
  • ⅓ cup maple syrup
  • ½ cup milk (dairy or plant-based)
  • 1 tsp vanilla extract
  • 1 ½ cups shredded carrots
  • ½ cup walnuts or pecans (optional)

Instructions

 Preheat and Prepare Pan

Preheat your oven to 350°F (175°C). Line a 9x9-inch baking pan with parchment paper or grease with butter or oil to prevent sticking.

2. Mix Dry Ingredients

In a large mixing bowl, combine rolled oats, whole wheat flour, baking powder, cinnamon, nutmeg, and salt. Stir until evenly mixed.

3. Mix Wet Ingredients

In a separate bowl, whisk together eggs, applesauce, maple syrup, milk, and vanilla extract until smooth and combined.

4. Combine Wet and Dry

Pour the wet ingredients into the dry ingredients and stir until just combined. The batter should be thick but spreadable.

5. Add Carrots and Nuts

Fold in the shredded carrots and chopped nuts (if using) until evenly distributed.

6. Bake

Spread the batter evenly into the prepared pan. Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean. The top should be golden brown.

7. Cool and Slice

Allow the bars to cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely before slicing into squares.
