Indulge in a creamy Caramel Apple Vanilla Cheesecake that perfectly blends rich vanilla flavors with sweet caramel and tender apple pieces. This decadent dessert is a delightful addition to any occasion, offering a luxurious taste and beautiful presentation.

Ingredients

Scale

For the crust:

  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • ¼ cup sugar

For the cheesecake filling:

  • 3 (8 oz) packages cream cheese, softened
  • 1 cup sugar
  • 3 large eggs
  • 1 cup sour cream
  • 1 tablespoon vanilla extract

For the caramel apple topping:

  • 2 medium apples, peeled, cored, and diced
  • ½ cup caramel sauce (store-bought or homemade)
  • 1 teaspoon cinnamon
  • 1 tablespoon lemon juice

Instructions

  • Prepare the Crust:
    • Preheat your oven to 325°F (160°C).
    • In a mixing bowl, combine graham cracker crumbs, melted butter, and sugar until well combined.
    • Press the mixture firmly into the bottom of a 9-inch springform pan. Bake for 10 minutes, then remove and let cool.
  • Make the Cheesecake Filling:
    • In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy.
    • Gradually add in sugar and mix until well combined.
    • Add the eggs one at a time, mixing well after each addition.
    • Incorporate the sour cream and vanilla extract, mixing until smooth.
  • Combine and Bake:
    • Pour the cheesecake filling over the cooled crust and spread it evenly.
    • Bake in the preheated oven for about 55-60 minutes, or until the edges are set and the center has a slight jiggle.
    • Turn off the oven and let the cheesecake cool in the oven with the door slightly ajar for an hour to prevent cracking.
  • Prepare the Topping:
    • In a small bowl, toss the diced apples with lemon juice and cinnamon.
    • Cook the apples in a skillet over medium heat for about 5 minutes until just tender.
    • Remove from heat and let cool slightly before mixing in the caramel sauce.
  • Assemble and Chill:
    • Once the cheesecake is completely cooled, spread the apple mixture over the top.
    • Drizzle additional caramel sauce over the apples if desired.
    • Refrigerate for at least 4 hours, preferably overnight, before serving.

Notes

  • For the best flavor, use fresh, crisp apples such as Granny Smith or Honeycrisp.
  • You can make your own caramel sauce for a richer taste, or use a high-quality store-bought version.
  • Ensure all ingredients are at room temperature before mixing for a smooth cheesecake filling.
