For the Caramel Sauce:
- 1 cup granulated sugar
- 6 tablespoons unsalted butter
- ½ cup heavy cream
- 1 teaspoon vanilla extract
- Pinch of salt

- Make the Crust:
- In a bowl, mix flour, salt, and sugar. Cut in the cold butter until the mixture resembles coarse crumbs. Add ice water, one tablespoon at a time, until the dough forms. Shape into a disc, wrap in plastic, and chill for at least 30 minutes.
- Prepare the Filling:
- In a large bowl, toss the sliced apples with sugar, cinnamon, lemon juice, and flour. Set aside to let the flavors meld.
- Make the Caramel:
- In a saucepan, heat sugar over medium heat until it melts into a golden-brown caramel. Remove from heat and carefully stir in butter, followed by cream, vanilla, and salt. Let cool slightly.
- Assemble the Galette:
- Preheat the oven to 375°F (190°C). Roll out the chilled dough on a floured surface into a 12-inch circle. Transfer to a parchment-lined baking sheet. Arrange the apple mixture in the center, leaving a 2-inch border. Fold the edges over the apples and brush with melted butter.
- Bake:
- Bake for 35-40 minutes or until the crust is golden and the apples are tender. Drizzle the cooled caramel sauce over the top before serving.
- Serve:
- Enjoy warm or at room temperature, possibly with a scoop of vanilla ice cream.
