Instructions
- Preheat oven to 350°F (175°C) and grease two 9-inch round cake pans. Line with parchment paper if desired.
- Mix dry ingredients: In a medium bowl, whisk together flour, baking powder, baking soda, cinnamon, and salt.
- Cream butter and sugar: In a large bowl, beat butter and sugar together until light and fluffy, about 3-4 minutes. Add eggs, one at a time, beating well after each addition. Stir in vanilla.
- Add coffee and buttermilk: Mix in brewed coffee and buttermilk, followed by the dry ingredients. Stir until combined, being careful not to overmix.
- Bake: Divide the batter evenly between the prepared pans and bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean. Let the cakes cool in the pans for 10 minutes before transferring to wire racks.
- Make the frosting: Beat softened butter and powdered sugar until smooth. Gradually add brewed coffee, vanilla extract, espresso powder (optional), and a pinch of salt. Mix until fluffy.
- Assemble: Once the cakes are fully cooled, spread frosting on top of one layer, then place the second layer on top. Frost the entire cake, smoothing out the edges.
