Instructions
- Mix the Filling: In a bowl, combine 1 cup of creamy peanut butter, 1 cup of confectioner’s sugar, and 1 teaspoon of vanilla extract. Stir until well blended and forms a thick dough.
- Form Balls: Scoop out about 1 tablespoon of the mixture and roll it into a ball. Place on a parchment-lined baking sheet. Repeat until all mixture is used, making about 20-25 balls.
- Chill: Freeze the balls for 30 minutes to firm them up.
- Melt the Chocolate: In a microwave-safe bowl, melt 2 cups of chocolate chips and 1 tablespoon of coconut oil in 30-second intervals, stirring until smooth.
- Coat the Balls: Dip each chilled ball in the melted chocolate, allowing excess to drip off, then place back on the baking sheet.
- Set and Serve: Refrigerate for another 30 minutes until the chocolate is set. Enjoy your Butterfinger Balls!
