Instructions

  • Preheat Oven: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  • Make the Cookie Dough: In a large bowl, cream together 1 cup softened butter and 1 cup granulated sugar until light and fluffy. Add the egg and vanilla extract, then mix until fully combined. In a separate bowl, whisk together 2 ½ cups flour, ½ tsp baking powder, and ¼ tsp salt, then gradually add it to the butter mixture, mixing until the dough comes together.
  • Prepare the Cheesecake Filling: In a medium bowl, beat the 8 oz cream cheese and ½ cup powdered sugar until smooth. Stir in 1 tsp vanilla extract until fully incorporated.
  • Form the Cookies: Roll the cookie dough into 1-inch balls and place them on the prepared baking sheet. Press your thumb or the back of a spoon into the center of each dough ball to create a well. Spoon about 1 tsp of cheesecake filling into the center of each dough ball.
  • Bake the Cookies: Bake for 10-12 minutes or until the edges are lightly golden. The cheesecake filling should set but remain soft. Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack.
  • Serve: Once cooled, dust with powdered sugar if desired and serve.
