Ingredients
Scale
- 1 tablespoon olive oil
- 1 large onion, diced
- 2 cloves garlic, minced
- 2 medium potatoes, peeled and diced
- 4 cups broccoli florets (fresh or frozen)
- 4 cups vegetable broth (or chicken broth)
- 1 cup Stilton cheese, crumbled
- 1/2 cup heavy cream (optional)
- Salt and pepper, to taste
- 1 tablespoon fresh lemon juice (optional)
Instructions
- Sauté the Vegetables:
Heat olive oil in a large pot over medium heat. Add diced onion and sauté for 5 minutes until softened. Add minced garlic and cook for another minute until fragrant. - Cook the Broccoli and Potatoes:
Add diced potatoes and broccoli florets to the pot, stirring for 2-3 minutes to coat with the oil. Pour in the vegetable broth and bring to a simmer. Let the soup cook for 15-20 minutes until the potatoes and broccoli are tender. - Blend the Soup:
Use an immersion blender to purée the soup until smooth, or transfer the soup in batches to a regular blender. Return the soup to the pot. - Add Stilton and Cream:
Stir in the crumbled Stilton cheese and heavy cream (if using). Mix until the cheese melts into the soup, creating a creamy texture. Taste and adjust seasoning with salt, pepper, and a squeeze of lemon juice. - Serve:
Ladle the soup into bowls and garnish with a few more crumbles of Stilton or fresh herbs. Serve with crusty bread for dipping.
Notes
- For a dairy-free version, substitute Stilton with a non-dairy cheese and use coconut cream or cashew cream instead of heavy cream.
- You can freeze the soup for up to 3 months. Simply let it cool, then store in an airtight container. Reheat by adding more broth to adjust consistency.
- If you want more protein, consider adding cooked chicken or lentils.
