Ingredients

Scale

For the Brioche Dough:

  • 4 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 1 packet (2 1/4 tsp) active dry yeast
  • 1 teaspoon salt
  • 4 large eggs, room temperature
  • 1/2 cup whole milk, warmed
  • 1 cup unsalted butter, softened

For the Fillings:

  • 1 cup chocolate chips (or any preferred filling)
  • 1 cup fruit preserves (e.g., raspberry, apricot)
  • 1 cup cream cheese, softened (optional)
  • 1/4 cup powdered sugar (for sweetening cream cheese, optional)

Instructions

  • Prepare the Dough:
    • In a large bowl, combine warm milk and sugar. Sprinkle yeast on top and let it sit for 5-10 minutes until foamy.
    • Add flour and salt, then mix in eggs one at a time. Gradually incorporate softened butter until dough is smooth.
    • Knead the dough on a floured surface for about 10 minutes, or until elastic and smooth.
  • First Rise:
    • Place the dough in a greased bowl, cover with plastic wrap, and let rise in a warm place for about 1-2 hours, or until doubled in size.
  • Shape the Pastries:
    • Punch down the dough and roll it out into a rectangle (about 1/4 inch thick). Cut into squares.
    • Place a tablespoon of your chosen filling in the center of each square. Fold the corners over to seal.
  • Second Rise:
    • Arrange the filled pastries on a baking sheet lined with parchment paper. Cover and let rise for another 30-45 minutes.
  • Bake:
    • Preheat the oven to 375°F (190°C). Bake the pastries for 15-20 minutes, or until golden brown.
  • Cool and Serve:
    • Allow the pastries to cool slightly before serving. Dust with powdered sugar if desired.

Notes

  • Experiment with different fillings to customize your pastries.
  • Ensure all ingredients are at room temperature for best results.
  • For a glossy finish, brush with an egg wash before baking.
