  • Yield: Approximately 12 servings 1x

Description

Bomboloni are delightful Italian donuts that blend a fluffy, pillowy dough with rich fillings like creamy pastry or zesty jam. These sweet treats are perfect for cozy brunches or festive gatherings, making each bite a moment of indulgence. Whether dusted with sugar or filled to the brim, bomboloni promise a burst of flavor that will transport you straight to Italy.

Ingredients

Scale
  • 4 cups all-purpose flour
  • 1 cup granulated sugar (divided)
  • 2 tsp active dry yeast
  • 1 cup whole milk (warm)
  • 4 tbsp unsalted butter (melted)
  • 3 large eggs
  • 1 tsp salt
  • Vegetable oil (for frying)
  • Pastry cream or fruit jam (for filling)

Instructions

  1. Prepare the Dough: In a large bowl, combine warm milk, ¼ cup sugar, and yeast. Let it sit for about five minutes until foamy. Add melted butter, eggs, salt, and flour; mix until a dough forms.
  2. Knead: Transfer the dough to a floured surface and knead for about eight minutes until smooth. Place it in an oiled bowl, cover with a damp cloth, and let it rise in a warm place until doubled in size (about one hour).
  3. Shape: Once risen, punch down the dough and roll into small balls (about 2 inches in diameter). Place on parchment-lined trays.
  4. Second Rise: Cover again with cloths and let rise for another 30 minutes until puffy.
  5. Frying: Heat vegetable oil in a deep pot to around 350°F (175°C). Fry bomboloni in batches for about two minutes per side until golden brown.
  6. Fill and Dust: Allow cooling slightly before filling each donut with pastry cream or jam using a piping bag. Roll in granulated sugar while still warm.
