Description

This Blackberry Cobbler is a rustic, delicious dessert featuring juicy blackberries topped with a golden, buttery crust. It's simple to make and perfect for showcasing fresh berries.

Ingredients

Scale
  • 2 cups fresh blackberries (or frozen, thawed and drained)
  • 1 cup granulated sugar, divided
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 1 cup milk
  • 1 teaspoon vanilla extract

Instructions

  • Prepare the Oven and Fruit Filling:
    • Preheat the oven to 175°C (350°F). Grease a 9x9-inch baking dish.
    • In a bowl, gently toss the blackberries with 1/4 cup of sugar. Set aside.
  • Make the Batter:
    • In a mixing bowl, combine the remaining 3/4 cup sugar, flour, baking powder, and salt.
    • Stir in the melted butter, milk, and vanilla extract until just combined. The batter will be slightly lumpy.
  • Assemble the Cobbler:
    • Pour the batter into the prepared baking dish, spreading it out evenly.
    • Spoon the sugared blackberries over the batter. Do not stir; the batter will rise around the berries as it bakes.
  • Bake:
    • Bake for 45-50 minutes, or until the cobbler is golden brown and a toothpick inserted into the batter comes out clean.
  • Serve:
    • Let cool slightly before serving. Enjoy warm with a scoop of vanilla ice cream or a dollop of whipped cream.

Notes

  • If you like your cobbler extra sweet, sprinkle a bit more sugar on top before baking.
  • For a twist, add a pinch of cinnamon or nutmeg to the batter for extra warmth and flavor.
